Agitator.

The agitator is a cellar tool that can be put to a whole range of uses.

Today, we’re going to talk about how it is possible to agitate wine inside the tank to increase and accelerate the maturation “sur lie” (on fine lees) of certain wines.

This maturation exploits the autolysis of the yeasts to convey more body and longer life to the wine, along with greater integrity, a more stable colour and better compliance with the varietal characteristics of the grape.

Sometimes, like this morning, you walk into the cellar, draw off a Barbera 2013 (Villalta) from a tank and find that its “broken down”, with notes of reduction that mask the fruit.

So you bend down and switch on the agitator.

Half an hour later you taste it again and are astounded by just how different the wine is.

Ok, so it looks a little cloudy but it is incredibly clean, pure and alive again.

The mysteries of wine… especially when it’s very young and, consequently, highly reactive and biologically unstable. We simply have to wait for time and nature to give our Barbera healthy legs to carry it on its long journey.

Oggi parliamo della possibilità di agitare il vino dentro alla vasca per aumentare ed accelerare la maturazione “sur lie” (sulle fecce fini) di alcuni vini.

Una maturazione che, sfruttando l’autolisi dei lieviti, conferisce al vino maggior corpo, maggior tenuta nel tempo, maggiore integrità, migliore fissazione del colore ed una più definita aderenza alle caratteristiche varietali dell’uva di partenza.

Alle volte, come stamattina, entri in cantina, spilli dalla vasca una Barbera 2013 (Villalta) e la trovi scomposta, con note di riduzione che ne offuscano la trama del frutto.

Riassaggi dopo mezz’ora e ti sorprendi nel trovare un vino diverso.

Ok il vino è velato alla vista ma incredibilmente si è pulito, è tornato puro e vivo.

Misteri del vino soprattutto quando, in fase giovanile, è molto reattivo e biologicamente instabile.

Bisogna solo aspettare che tempo e natura conferiscano alla nostra Barbera gambe sane per il suo lungo cammino.
